1 LIN BROWNE'S AWESOME CROCK POT CHICKEN CHILI on Sun Aug 29, 2010 1:24 am

1 1/2 lbs. boneless skinless chicken breasts, cut into 1/2" cubes (I use six of the Foster Farms Individual Vacuumed Sealed Breasts I get from Costco.)
1 medium yellow onion, chopped
1 can (15oz.) S & W Cannelli or White Kidney Beans, rinsed &
drained
1 can (14 1/2oz.) S & W Diced Tomatoes, UNDRAINED
1 can (14 1/2oz.) Del Monte Diced Tomatoes with Mild Green
Chilies, UNDRAINED
1 can (15oz.) sweet corn, rinsed & drained
1 tsp. ground cumin
1 tsp. minced garlic
3/4 tsp. celery salt
1/2 tsp. ground coriander
1/2 tsp. ground pepper
Fat Free sour cream & shredded sharp cheddar cheese (optional)

In a large skillet (sprayed with Pam or the likes), saute chicken onion & garlic until chicken is lightly browned. Transfer to a 5 qt. slow/crock pot. Stir in the beans, tomatoes, corn & seasonings. Cover & cook on low for 5 hours or until chicken is no longer pink. Garnish with sour cream & cheese if desired.
Yield: 6 servings.

I hope you enjoy this "twist on chili" as much as my guests do...
