1 Cheese Tomato Basil Chicken Breasts on Tue Oct 20, 2009 7:45 pm

6 boneless skinless chicken breast halves

Topping:
6 oz grated mozzarella cheese (or cut into strips)
1/4 cup chopped fresh parsley (optional)

Sauce:
3 tbsp butter or margarine
*2 cup cubed ripe tomato
*1/3 cup chopped onion (more is preferred)
*6oz can of tomato paste
*1 tbsp basil leaves (dried)
*1/2 tsp salt
*1/4 tsp pepper
*2 tsp minced fresh garlic (heaping spoons:)

[* = Prepare & refrigerate at least the night before]


Heat overn to 350 degrees. In a 13x9 baking pan melt 3 tbsp butter in over. Meanwhile, in medium bowl, stir together remaining sauce incredients; set aside. Place chicken in baking pan, turning to coat with butter. Spoon sauce mixture over chicken. Back for 35 to 40 minutes or until chicken is no longer pink. Place grated cheese over chicken; sprinkle with parsley. Continue baking 5 to 10 minutes or until chicken is fork tender and cheese is melted.


This is one of the recipes that was talked about in the meeting last thursday.
